Broccoli Slaw

Ingredients

  • 16oz Broccoli SLaw Mix
  • 4 Green Onions
  • 2 Packages Chicken Flavored Ramen Noodles
  • ⅓ cup Slivered Almonds
  • ½ cup Sunflower Seeds
  • ½ cup Olive Oil
  • ½ cup Applce Cider Vinegar
  • ½ cup Sugar
  • 2 Seasoning Packets Ramen Noodles

Directions

Crumble noodles into large bowl and mix with slaw. Add chooped green onions, almonds, and sunflower seeds.
For dressing combine oil, sugar, vinegar and seasoning packet in shaker bottle. Shake until sugar dissolves
Pour over salad and refrigerate. Chill for a short time to soften noodles.

Quick Salad

Quick Salad

Ingredients

  • ½ head Lettuce
  • ½ can Water Chestnuts
  • 1 stalk Celery
  • 1 box Green Peas
  • 2 Boiled Eggs
  • ½ cup Blue Cheese

Optional

  • 1 Small Onion

Directions

Slice onions thin if used and shred lettuce. Toss all ingredients in large salad bowl. place in frig.
Make Dressing:
1 cup mayonnaise
1/8 cup wine vinegar
1-tsb sugar
Let dressing sit for 1 hour in refrigerator to allow sugar to melt.
Spoon dressing over salad before serving.

  • 2 Heads Broccoli (florets)
  • ½ cup Purple Onion (thinly sliced)
  • ½ cup Raisins
  • ½ cup Pecans (chopped)
  • 1 Red Delicious Apple (chopped)
  • ¾ cup Sharp Cheddar Cheese (grated)
  • 3 Strips Bacon (cook and crumble)

Directions

Do not chop apple until ready to serve.
Mix all ingredients in salad bowl.
Make dressing:
1 cup mayonnaise,½ cup sugar,2 teaspoons apple cider vinegar.
Mix ahead of time to allow sugar to melt.
Add dressing to salad and toss. Add chopped apple to salad and serve.

Broccoli Casserole

Broccoli Casserole

Ingredients

  • 5 Cups Frozen Chopped Broccoli
  • ¾ cup Mayonnaise
  • 1 cup Sharp Cheese (grated)
  • 2 eggs (beaten)
  • 2 Cups Ritz Crackers (crushed)

Directions

Preheat Oven 325 degrees
Cook broccoli for 5 minutes. Drain and cool
Mix mayonnaise, cheese, soup and beaten eggs. Add broccoli to cheese mixture and place in buttered baking dish.
Top with crushe dRitz crackers and dot with butter and bake 325 degrees for 35 minutes
