Quick Salad

Ingredients

  • ½ head Lettuce
  • ½ can Water Chestnuts
  • 1 stalk Celery
  • 1 box Green Peas
  • 2 Boiled Eggs
  • ½ cup Blue Cheese

Optional

  • 1 Small Onion

Directions

Slice onions thin if used and shred lettuce. Toss all ingredients in large salad bowl. place in frig.
Make Dressing:
1 cup mayonnaise
1/8 cup wine vinegar
1-tsb sugar
Let dressing sit for 1 hour in refrigerator to allow sugar to melt.
Spoon dressing over salad before serving.

Chicken Pasta Salad

Chicken Pasta Salad

Ingredients

  • 2 Cups Seashell Macaroni (cooked)
  • 3 Cups Chicken (grilled and chopped)
  • 1 can Mandarin Oranges (11oz )
  • ¾ cup Slivered Almonds
  • ¼ cup Celery (finely chopped)
  • 2 Cups Seedless Red or Green Grapes
  • 1½ Cups Mayonnaise
  • 1 teaspoon Salt and White Pepper

Directions

Cook macaroni and grill chicken.
Combine all ingredients and chill for at least 4 hours
Serve over leaf lettuce and sprinkle with paprika. Garlic french bread or cheese bread can be served with salad.

Broccoli Salad

Broccoli Salad

Ingredients

  • 2 Heads Broccoli (florets)
  • ½ cup Purple Onion (thinly sliced)
  • ½ cup Raisins
  • ½ cup Pecans (chopped)
  • 1 Red Delicious Apple (chopped)
  • ¾ cup Sharp Cheddar Cheese (grated)
  • 3 Strips Bacon (cook and crumble)

Directions

Do not chop apple until ready to serve.
Mix all ingredients in salad bowl.
Make dressing:
1 cup mayonnaise,½ cup sugar,2 teaspoons apple cider vinegar.
Mix ahead of time to allow sugar to melt.
Add dressing to salad and toss. Add chopped apple to salad and serve.

Taco Salad II

Taco Salad II

Ingredients

  • 1 Pound Ground Chicken
  • 1 1.25oz. Package Taco Seasoning
  • 1 head Lettuce (chopped or shredded)
  • 2 Large Tomatoes (chopped)
  • 2 Avocados (chopped)
  • 1 10oz. Can Ranch Style Beans
  • 1 cup Grated Cheese
  • 1 8oz. Bottle Catalina Dressing

Directions

Brown chicken in non-stick skillet and add taco seasoning with a ½ cup water. When water is cooked out, set aside.
Combine all other ingredients starting with lettuce. Pour chicken over top. Add Catalina dressing and toss.
Serve immediately, with taco chips, salsa and sour cream.
