Parmesan Baked Chicken
Ingredients
- 1 whole Chicken (cut into pieces)
- 1 cup Herb Seasoning
- ⅔ cup Grated Parmesan Cheese
- ¼ cup Chopped Parsley
- 1 stick Butter (melted)
Directions

| Preheat oven to 375 degrees. |
|
|
| Mix herb seasoning, grated parmesan cheese, and chopped parsley in bowl. |
|
|
| Melt butter and pour into pie dish. |
|
|
| Dip chicken pieces into butter and then dry mixture. Place into buttered or sprayed 9x13 baking dish. |
|
|
| Bake at 375 degrees for 45 minutes. |

Maes Pork Roast
Ingredients
- 3-4 pounds Prok Roast
- ½ tablespoon Rosemary
- ½ teaspoon Nutmeg
- 2½ teaspoons Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Thyme
Directions

| Preheat oven to 450 degrees |
|
|
| Mix dry ingredients and rub pork roast. |
|
|
| Put pork roast into dutch oven or heavy baking pan and bake at 450 for 20 minutes |
|
|
| Reduce temperature to 350 degrees and cook for 40 minutes per pound or 160 degrees internal temp. |

Broccoli Slaw
Ingredients
- 16oz Broccoli SLaw Mix
- 4 Green Onions
- 2 packages Chicken Flavored Ramen Noodles
- ⅓ cup Slivered Almonds
- ½ cup Sunflower Seeds
- ½ cup Olive Oil
- ½ cup Applce Cider Vinegar
- ½ cup Sugar
- 2 Seasoning Packets Ramen Noodles
Directions

| Crumble noodles into large bowl and mix with slaw. Add chooped green onions, almonds, and sunflower seeds. |
|
|
| For dressing combine oil, sugar, vinegar and seasoning packet in shaker bottle. Shake until sugar dissolves |
|
|
| Pour over salad and refrigerate. Chill for a short time to soften noodles. |

Avocado and Tomato Salsa
Ingredients
- 1 Whole Avacado (Peeled and Diced)
- 4 Roma Tomatoes (Diced)
- ½ cup Purple Onion (Finely Chopped)
- ½ cup Bell Pepper (Finely Chopped)
- 1 Fresh Jalapeño Pepper (Seeded and Chopped)
- 1 Green Chile (Finely Chopped)
- 1 clove Fresh Garlic (Minced)
- 2 tablespoons Red Wine Vinegar
- 1 tablespoon Olive Oil
- 4 drops Hot Sauce
- Salt and Pepper - To taste
Directions

| Mix red wine vinegar, olive oil and hot sauce in bowl set aside. |
|
|
| Combine other ingredients and then add to liquid mixture. Stir, trying no to mash avocado. |
|
|
| Allow a couple of hours to chill in refrigerator. |
|
|
| Serve with chips, quesadillas, tacos or burritos and don’t forget the sour cream. |
