Crab Newburg


  • 12oz Lump Crab Meat
  • ¼ cup Onion (Diced)
  • ½ cup Mushrooms
  • 1½ cup Half & Half
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 2 tablespoons Dry Sherry
  • 1 Pinch Cayenne Pepper
  • 4 Slices Provolone or Swiss Cheese
  • sprinkle Paprika
  • Salt & Pepper (To Taste)


In a skillet sauté onion and mushroom in butter until tender. remove from pan.
Sprinkle in the flour while stirring until light brown.
Add half & half and continue stirring or whisking slowly. Once milk has thickened, add crab meat, sherry, cayenne pepper, onion and mushrooms. Salt and pepper to taste.
Pour mixture evenly into 4 small baking bowls and put a slice Provolone or Swiss over the top and sprinkle with paprika. Bake in 350 degree oven until cheese melts.
